What Does F4 Purebred Wagyu Mean?

F4 represents approximately 93.75% Wagyu ancestry, compared with approximately 50% for first-generation F1 crossbred Wagyu.

F1 crossbred Wagyu typically comes from crossing a fullblood Wagyu animal with another cattle breed, such as Angus. Breeding successive generations back to fullblood Wagyu increases expected pedigree ancestry: approximately 50% at F1, 75% at F2, 87.5% at F3 and 93.75% at F4.

F4 describes breeding; BMS describes marbling. This tenderloin combines F4 purebred heritage with its own 8+ BMS marbling grade. F4 Purebred is distinct from 100% fullblood Wagyu.

Cooking Your Wagyu Filet Mignon

These instructions are for individual filet steaks cut from the tenderloin.

Pat steaks thoroughly dry and season with coarse salt and freshly cracked black pepper. Preheat a heavy skillet over medium-high heat, then sear both sides until a browned crust develops. Briefly sear the edges using tongs to hold the steak securely.

For thick filets, reduce the heat after searing and continue cooking gently. Use an instant-read thermometer inserted into the center to guide cooking, since thickness, starting temperature and cooking surface heat affect timing.

Rest before serving.

Joe’s Grilling Tip

Use direct heat to develop a crust, then move thicker filets to an area away from direct heat to finish cooking gently. Watch for flare-ups from rendered fat and stay at the grill throughout cooking.
