Explore Australian Wagyu

This is not ordinary steak. Our Master Selection F4 Purebred Australian Wagyu comes from an award-winning Australian Wagyu program recognized as the 2026 Overall Champion in the Purebred Class at the Australian Beef Tasting Competition. Raised in Australia and finished on a minimum 400-day grain-feeding program featuring Australian barley and wheat, this Wagyu delivers extraordinary marbling, tenderness and rich beef flavor.

You don't need complicated preparation to experience it. For most cuts, a little salt and proper cooking are all you need. Whether you're looking for intense marbling and classic Wagyu richness, exceptional tenderness and a velvety texture, or a lesser-known cut with remarkable flavor and value, use the guide below to find your favorite.

Exceptional Tenderness & Velvety Texture

For those who prize tenderness above all else—delicate texture, exceptional softness and the luxurious mouthfeel that makes Wagyu unforgettable.

Australian Wagyu

Filet Mignon — 8–9 BMS

Our most luxurious filet, combining exceptional tenderness with beautiful marbling and a rich, buttery finish. The higher marble score adds richness while preserving the remarkably soft texture filet mignon is known for.

Butcher’s Note: Incredibly tender with exceptional flavor—a great choice when you want both the tenderness of filet and the richness of highly marbled Wagyu.

Australian Wagyu

Filet Mignon — 4–5 BMS

Exceptionally tender and delicate with less visible fat than our higher-marble filet. A beautiful choice for customers who value the soft, velvety texture of filet mignon with a cleaner, more traditional beef experience.

Butcher’s Note: A favorite for customers who prioritize tenderness and great flavor without wanting as much richness or fat.

Australian Wagyu

Hanging Tender

A lesser-known butcher’s cut prized for its remarkable tenderness and deep, beef-forward flavor. Australian Wagyu elevates this naturally flavorful cut with added richness and a wonderfully soft texture.

Butcher’s Note: One of the hidden gems of the animal—exceptionally tender, deeply flavorful and well worth discovering.

Classic Wagyu Marbling & Rich Flavor

For the classic Wagyu experience—exceptional marbling, rich beef flavor and remarkable tenderness.

Australian Wagyu Ribeye —

8-10 BMS

Rich, deeply marbled and exceptionally juicy. Ribeye delivers the bold beef flavor and buttery tenderness that make Australian Wagyu unforgettable.

Butcher’s Note: Our most flavorful cut—richly marbled, exceptionally tender and a standout choice for the full Wagyu experience.

Australian Wagyu

New York Strip — 8-10 BMS

Exceptionally consistent from bite to bite, with rich marbling, deep beef flavor and a satisfying steak texture. An outstanding choice for high-marble Australian Wagyu.

Butcher’s Note: Extremely consistent from bite to bite and a favorite for high-marble-score Wagyu.

Australian Wagyu Picanha — 8–9 BMS

Known for its signature fat cap, Picanha delivers rich beef flavor, excellent tenderness and beautiful marbling. A distinctive cut that showcases the depth and richness of Australian Wagyu.

Butcher’s Note: Cut from the rump, Picanha is especially flavorful and shines when cooked whole or cut into thick steaks with the fat cap left intact.

Cuts Worth Discovering

Exceptional flavor and value beyond the traditional steakhouse cuts—three distinctive cuts worth getting to know.

Australian Wagyu Short Rib — 6–7 BMS

Remarkably marbled and intensely flavorful, Australian Wagyu Short Rib delivers tremendous richness and tenderness. The natural marbling makes this an impressive cut without requiring complicated preparation.

Butcher’s Note: The marbling on this cut is incredible. Keep it simple—season it, cook it and let the Wagyu do the work.

Australian Wagyu

Flank Steak — 6–7 BMS

A deeply beefy, versatile cut with excellent flavor and a satisfying texture. Australian Wagyu marbling brings additional richness and tenderness to a steak that's equally at home simply seasoned or paired with a marinade.

Butcher’s Note: An underrated cut with outstanding beef flavor—easy to cook, versatile and especially good simply seasoned or marinated.

Australian Wagyu Tri-Tip — 6–7 BMS

A flavorful, versatile cut that offers exceptional Wagyu character and tremendous value. Tri-Tip develops beautifully with slower cooking methods while retaining the rich beef flavor Australian Wagyu is known for.

Butcher’s Note: A fantastic choice for the smoker or sous vide. Give this one a little more time and it rewards you with incredible flavor.
