Tim's Recommendation

Skirt steak is one of my favorite cuts when I want big Wagyu flavor without a complicated cook. Season it generously with carne asada seasoning, get the grill very hot, and cook it for about 3 minutes per side until it reaches your preferred temperature. Let it rest for about 5 minutes, then slice thinly across the grain. It’s outstanding for tacos, fajitas, or just eating straight off the cutting board.

Follow these steps to build a flavorful crust while keeping your Australian Wagyu Skirt Steak juicy and tender.

  3. Sear the steak

    High heat • Flip once

    Cook for about 3 minutes per side, flipping once, until a rich crust develops.

  4. Check the temperature

    Pull around 128°F for medium rare

    Check the center with an instant-read thermometer and remove the steak at about 128°F for medium rare.

  5. Rest and slice

    5 minutes

    Rest for about 5 minutes, then slice thinly across the grain before serving.
